Awesome product - just the right size for partitioning of a whole chicken. It trims meat of bones effectively and even though I have hit some boney parts on numerous occasions, it sliced through them with an ease and without harm to the blade. It keeps sharp edge very well - after 5 birds or so it is still sharp and there is no signs of it getting dull. Very happy with this purchase.

きれいで、握りも、水に濡れてもすべらず機能的なデザインです。
刃つけに、苦労しました。試行錯誤。元の切れ刃の角度にそって軟鉄、鋼とも削りました。、1000番、2000番、天然砥石2種。平面に見えるようでも微妙に凹凸があり、砥面をダイヤモンド砥石で修正しながら根気つよく研ぎました。結果、満足のいくキレ味がでました。
強く、刃持ちもよく、粘りもある気がします。まっすぐ切れます。おもさもあり刀身の硬さもあり、本職の方が使えばきっと、たのしいと思いました。日本の貴重な伝統と技術を伝承されています。ありがとうございます。
